These earthy-tasting tubers, also known as Jerusalem artichokes, are a species of sunflower that are used as a root vegetable in cooking.  They have a nutty flavor that tastes somewhat like an artichoke and a potato crossed with a texture similiar to that of a water chestnut.  Try them roasted in the oven with garlic and fresh herbs.
