Vegan Pumpkin Bread

Ingredients: 4 cups white whole wheat flour 1 cup light brown sugar 2 tsp baking powder 2 tsp baking soda 2 tsp cinnamon 2 pinches kosher salt 2/3 cup water 1/3 cup canola oil 1/3 cup applesauce 3 cups pumpkin puree (fresh or canned) 3 tbsp flaxseed meal 1/2-1 cup dark chocolate chunks (optional) Instructions: 1. Preheat oven to 350 degrees F. 2. Lightly grease and flour two-9x5 inch loaf pans. 3. Mix all ingredients together in large mixing bowl. 3. Split evenly between two prepared loaf pans. 4. Bake for 55 minutes. Remove from oven and let cool. Remove from pan and enjoy!
