Savory Heirloom Cornmeal Pancakes

Ingredients: 1 1/4 cups milk 1 tbsp butter 1/2 cup flour 1 cup cornmeal 2 tbsp minced shallot 1 tsp baking powder 1 tsp salt 1 egg (lightly beaten) Instructions: 1. Heat milk with butter in small saucepan until the mixture begins to simmer. 2. Combine flour, cornmeal, baking powder, and salt. Whisk to blend. 3. Add hot milk mixture to dry ingredients, and stir. Stir in shallots. 4. Whisk in the beaten egg. 5. Drop onto a hot, greased griddle, and fry until golden brown on both sides.
