Spaghetti Squash Gratin
Ingredients: 3 pound spaghetti squash 8-ounce package baby bella mushrooms, sliced 5 tbsp butter Salt & pepper to taste 2 garlic cloves, minced 1 cup half & half Instructions: 1. Preheat oven to 375 degrees F. 2. Cut squash in half length-wise, scoop out seeds, and lay squash face side down in baking dish. Bake for 1 hour, until it's soft. 3. While squash is baking, melt half the butter in skillet. Add mushrooms and cook over medium high heat until tender, 3-5 minutes. Season with salt and pepper. Add garlic and half and half. Simmer until half and half is reduced by ~1/3. 4. When squash is finished baking, pull away the flesh with a fork. Toss in a bowl with remaining butter. Spread squash in a baking dish, and spoon the mushroom cream sauce over it. 5. Return to oven until heated through, about 15-20 minutes. Serve immediately.
